La Trastienda de Chago has a clear commitment to local products from Gáldar, Gran Canaria and other Canary Islands. And it seems that 80% of the genre on its menu is produced in the Canary Islands. Chago's Backroom
According to what its owners told us, the restaurant is in turn in an old house of Gáldar dedicated to restoration for decades. However, now it has a very careful decoration and setting like a typical Canarian backroom. As we said, one of the charms and differentiating elements of La Trastienda de Chago is its wide range of Canarian wines and beers.. In fact they are called “Enoteca”. We had the luxury of trying a very flavorful Lanzarote beer that we recommend, La Capitán. Also the red VidSnt2 of the Listán Negro and Tintilla grape variety grown in Monte Lentiscal, Santa Brígida. Spectacular!
Apparently they are changing the menu, that is why we are not sharing it with you here. However, we tried some tomatoes dressed with onion (both Gáldar), which were delicious. We also tasted a Guia sheep cheese matured with Indian prickly pear and another Tejeda sheep and goat. Very rich.
We continue with some local vegetables smoked with vine shoots. Apparently the shoot is what remains on the vine after pruning. It was the first time we tried it. They were super tasty and fresh.
Lastly, we wanted to test the fried potatoes (Moya potatoes) with acorn-fed ham. They cook the eggs well (without them being raw) and it seems that they also have sweet paprika. We loved this dish.
Regarding desserts, we couldn't leave without being surprised by their specialties. One for chocolate lovers and another with a Canarian touch: the Moya sponge cake bathed in Whiskey.

La Trastienda de Chago opens from Tuesday to Thursday from 13:00 p.m. to 17:00 p.m. and from 20:00 p.m. to 23:30 p.m. On Fridays and Saturdays until midnight. Sundays and Mondays are closed. The place is not very big and is becoming fashionable, so we recommend making a reservation. Especially on Fridays and Saturdays. You can book on the terrace or inside (high stools).
