Recently, one of his restaurants, LaBoh (from LaBohratio y LaBohemia), has created an innovative experience called Around the table. Here chef Juan Bertolín and his team develop their creations and dishes inspired by his travels. The genre they use for their creations is mainly local and national products, although sometimes they include ingredients from other parts of the world..
The kitchen or laboratory is visible to the diners, so you can see the process involved in each dish.. The experience includes a tasting of 11 bites served around the table shared by a maximum of 8 diners. Pairing is optional, which we definitely recommend including. As is done with every dish, the sommelier explains the wine that accompanies it if you hire the pairing. It should be noted that part of the wines were from the Canary Islands, as can be the sparkling malvasía from El Grifo (Lanzarote) or the white from Los Hoyos (Gran Canaria), also of the malvasía variety.
